Spicy Mango Hat

Capture the feeling of visiting a fresh fruit cart in the middle of summer with this robust anytime treat! It’ll make you want to put together your own fruit hat and dance like no one’s watching!

First off you’ll need:

  • An overripe banana

  • An 8 oz can of mango juice/puree

  • Juice from 1 fresh lime

  • 2 dashes of cinnamon

  • 2 dashes of chili lime powder (start with two and work your way up)

  • 1 ts Demerara sugar

Mash the banana in a small pot and add the ingredients. Cook on medium heat, stirring often, until it boils. After it starts to smell like a mango bread pudding, turn off heat and let it set until room temperature. Strain the pot into a jar.

Tip - Put aside the excess bits from the strainer and add to pancake mix for a delicious tropical breakfast!

Add 4 oz of gold rum and 1½ oz of overproof dark rum. Shake in the jar and let it chill out in the fridge until you’re ready (you can also shake with ice, but I prefer it batched).

Pour over crushed ice in the glass of your choice. Once full, add a little more crushed ice and a few dashes of chili lime powder to taste.

Note - This recipe worked great for filling a large glass worth of booze for one, but also works for two in Old Fashioned glasses.
